This recipe has been a staple in our family for four generations. Preparation time is fast and easy and it’s always delicious.
Ingredients
Ingredients:
Whole chicken or chicken parts4-5lbs
4– 6 medium Potatoes
cup¼ - ½Olive oilor more as needed
Juice of 1-2 Lemonsapproximately ½ cup
6clovesof garlicminced
Flour as needed
salt and pepper
1Tablespoon Greek Oregano
1Tablespoon Chicken bouillon
1Tablespoon Rosemaryoptional
1Teaspoon Paprikaoptional
Most important: bread for dunking into the saucepapara
Instructions
Place whole chicken (or pre-cut legs and thighs if you prefer) in a baking dish. Coat the chicken with flour (this will make it crusty). Peel potatoes in wedges and place in pan around the chicken. Pour in the olive oil and lemon juice. Sprinkle with the salt, pepper, bouillon, garlic, rosemary, paprika and oregano. Finally add enough water to cover the ingredients half way.
Place pan in a 350 degree preheated oven and let cook for approximately 2 hours. Turn the meat and potatoes over half way through the cooking.
Cook until the chicken and potatoes are golden brown, easy to prick the fork through and the sauce has boiled down to a non-watery consistency.
