Thinly cut the potatoes, onions, garlic and zucchini and add to baking dish. If you use canned tomatoes pour all over the vegetables. If you use fresh tomatoes cut them and add to the other ingredients. Finally, add olive oil and a dash of salt and pepper to taste.
Cook in oven for 45 to 60 min or until the potatoes are cooked thoroughly. Stir every 10 to 15 min to make sure that it doesn't burn. You may have to add some water if you see it beginning to dry.
Can be served as main meal accompanied with Feta cheese and freshly baked warm bread.
It can also be eaten as a side.
