Deliciously Healthy Oven Roasted Vegetables

Briam is a mix of oven cooked vegetables and potatoes. It is very easy and fast to make. Perfect recipe for Lenten meal.

Oven Roasted Vegetables or Briam

Servings: 3 people

Ingredients

  • 2-3 medium potatoes
  • 2-3 medium zucchinis or squash
  • 2 medium yellow onions
  • 4 medium fresh tomatoes or one can crushed tomatoes
  • 2-3 medium carrots
  • 3-4 cloves garlic
  • 1/4 cup olive oil
  • salt and pepper to taste

Instructions

  • Preheat the oven to 350 degrees
  • Thinly cut the potatoes, onions, garlic and zucchini and add to baking dish. If you use canned tomatoes pour all over the vegetables. If you use fresh tomatoes cut them and add to the other ingredients. Finally, add olive oil and a dash of salt and pepper to taste.
  • Cook in oven for 45 to 60 min or until the potatoes are cooked thoroughly. Stir every 10 to 15 min to make sure that it doesn’t burn. You may have to add some water if you see it beginning to dry.
  • Can be served as main meal accompanied with Feta cheese and freshly baked warm bread. It can also be eaten as a side.
