Greek Village Salad

Horiatiki salad

The “Horiatiki” salad is a staple of the Greek table -No meal is complete without a big bowl of Greek salad. I have never been to my Yiayia's home for lunch or dinner without this being served. We eat it for lunch and dinner and some could even it for breakfast! I remember one summer in Greece sitting on the balcony with my pappou (grandfather) in Akrata. I asked him what Greeks ate for breakfast back in the day. He responded that we would eat fresh tomatoes with olives and a piece of fresh bread. That says it all… Enough said, here is how you make it!

Ingredients

  • Ingredients:
  • 4 tomatoes I usually use the large grape tomatoes
  • 1 in Cucumber peeled and sliced round . you could cut the sliceshalf if you prefer
  • in Half of a red onion cutcrescents
  • Feta cheese
  • Olives
  • oregano
  • salt and pepper
  • 2 tablespoons olive oil
  • Red wine vinegar
  • in Optional: Green pepper cuthorizontal slices

Instructions

  • Wash tomatoes and cut in eights or 16ths. Add sliced cucumber, onion and salt and pepper to taste.
  • Top the salad with one or two 1/2 inch slices of the feta cheese. Pour the olive oil and red wine vinegar over the feta and finally sprinkle the oregano over all the ingredients. Optional : Add 3 or 4 slices of green pepper.
  • Eat it with a slice of fresh bread!

Notes

Important note: Do not add lettuce in the Greek salad - it removes the “Greek” from " Salad".
