Spinach and rice

Spanakorizo

This tasty meatless dish is super easy to prepare and can eaten as the main meal but also as a side.

Servings: 4 people

Ingredients

  • 1 bunch of spinach or one bag approximately 1 lb
  • 1 cup rice long grain
  • 1 Onion or 4 scallions diced
  • olive oil
  • 1 cup Tomato sauce optional
  • salt and pepper
  • 2 cups water or more if needed until the rice is cooked

Instructions

  • Wash spinach and squeeze out any excess water.
  • Brown the onions with the olive oil. Add the spinach and cook until reduces to about half the size.
  • If you are going to add tomato sauce, now is the time. Continue cooking for 10 minutes.
  • Then add rice, water, salt and pepper to taste, and simmer until rice is fully cooked.

Notes

You can accompany this recipe (along with almost any greek dish) with feta cheese. My daughter prepares this recipe without the tomato sauce. I prefer it with.
