Oven roasted lemon chicken and potatoes

Kotopoulo lemonato me patates
This recipe has been a staple in our family for four generations. Preparation time is fast and easy and it’s always delicious.
Ingredients
- Ingredients:
- Whole chicken or chicken parts 4-5lbs
- 4 – 6 medium Potatoes
- cup ¼ - ½Olive oil or more as needed
- Juice of 1-2 Lemons approximately ½ cup
- 6 cloves of garlic minced
- Flour as needed
- salt and pepper
- 1 Tablespoon Greek Oregano
- 1 Tablespoon Chicken bouillon
- 1 Tablespoon Rosemary optional
- 1 Teaspoon Paprika optional
- Most important: bread for dunking into the sauce papara
Instructions
- Place whole chicken (or pre-cut legs and thighs if you prefer) in a baking dish. Coat the chicken with flour (this will make it crusty). Peel potatoes in wedges and place in pan around the chicken. Pour in the olive oil and lemon juice. Sprinkle with the salt, pepper, bouillon, garlic, rosemary, paprika and oregano. Finally add enough water to cover the ingredients half way.
- Place pan in a 350 degree preheated oven and let cook for approximately 2 hours. Turn the meat and potatoes over half way through the cooking.
- Cook until the chicken and potatoes are golden brown, easy to prick the fork through and the sauce has boiled down to a non-watery consistency.
Notes
I can count numerous friends that I have already shared this recipe with. We always have some bread around to dunk into the tasty lemony sauce.
